I am interested in purchasing the (Right Angle Pivot Hinge, Bronze). Question: what are the degrees that this right angle hinge could pivot? I am looking for a hinge that would pivot horizontally from a vertical stance position.

This hinge will pivot 180+ degrees, and will function exactly as you are describing.

Do these come apart so that I can reverse one of them forming a "U" when opened? I have an antique secretary desk with floating bi fold doors and one of the hinges broke.

They do not, they are sold by the pair, which means you get a left & a right, or a top and bottom really. They can work on wither side of the door.

I have small cabinet doors but are 1 1/4” thick because of the molding applied to 1/2” MDF will this hinge work for me if is the one that will

Bill they are actually designed for 3/4" thick cabinets, so the pivot point will not extend past the door at all, and will make it difficult for the door to open very far. You may want to try a better pivot below.
