Is this Economy Lift Off Hinge ( SKU 814320) available in brushed nickle or plated in chrome? Brass does not work in my all-stainless kitchen.

It does not Unfortunately. That hinge only comes in Brass.

Must I remove the pin to separate the hinge? Can it just be lifted off?

Correct, it just lifts off, the pin is not knocked out or removed.
